The Elaris olive oil is made from olives which come exclusively from a selection of over 6000 trees planted more than 40 years ago in a rural area where the existing centenary olive trees have been preserved and integrated, and which blend in to the boundary of the calcareous soils of the Natural Park of the Serras de Aires and Candeeiros, in the district of Santarém in Portugal, to produce 120 tons of olives per year and provide an average of 20,000 litres of Olive Oil of supreme excellence.

In this region the traditional harvesting of the olives begins in November. The olives are manually bagged by specialized teams and mechanically processed into olive oil on the same day to preserve all the characteristics of a pure olive oil. It is then stored in stainless steel tanks to maintain the maximum freshness of an Extra-Virgin Olive Oil.

At the end of the harvest the olive oil is analysed, filtered and bottled, thus creating each year a special edition of Premium ELARIS Olive Oil, produced by the company DOMUS ELARIS LDA, and marketed by the company ELARIS INTERNATIONAL LLC.
